The most delicious low carb, low fat protein cupcakes possible!!!
Yields 9 single cups
each single cup cake (no topping)
Protein- 5 grams
One layered cupcake with PB and SF Jelly
Calories 52 calories
Fat- 1 g
Protein 10 grams
1 scoop Quest Protein (any flavor, I used strawberry)
1 cup egg whites
1/4 cup unsweetened almond milk (original or vanilla)
Natural unsweetened unsalted nut butter (I used fresh ground chocolate PB ) ** PROTIP fresh ground chocolate and regular PB have the same macros due to the volume of the chocolate chips in the mix , once ground it comes out to the same macros per serving!
Polaner’s Sugar Free with Fiber Jelly ( I use blackberry or raspberry)
Pre-Heat oven to 350 degrees
Mix Quest Protein Powder, Egg whites and almond milk in a bowl
Spray cupcake pan with nonstick spray or use paper cups (cups work best)
Pour mixture evenly into cups
Place in oven for 4-6mins
Remove cooked cupcakes from oven (they will be fluffy and deflate once out of the oven)
You can eat them plain, or you can spread 1/4 teaspoon of PB on one and 1/4 teaspoon of Jelly on another and make it into a layered cupcake
