Chocolate Lava Cupcakes

For the love of all things chocolate, protein, and healthy……. I have created a low carb, low fat, low calorie chocolate lava cup cake that hits any chocolate lovers spot!!!

This yields about 9 cup cakes

1 scoop Quest Chocolate Protein Powder

2 TSBP raw cacao powder

1Tsp Baking soda or powder

1/4 cup unsweetened chocolate almond milk (you can use any unsweetened almond milk)

1/2 cup eggwhites

2 Tbsp stevia (baking stevia is best)

2 Tbsp water

1 cupcake pan

Baking spray

Pre heat oven on 350 Degrees

Spray cupcake pan with cooking spray or use cupcake liners

Mix all ingredients in bowl

Pour ingredients into cupcake pan evenly filling each cake about 1/4 way full

Place in oven for 3-5 mins (be careful not to over cook as it will eliminate the gooey middle)

Remove from oven (cakes will deflate)

Eat as it or top with your favorite topping. I used Polaner’s Sugar Free with Fiber Raspberry Jelly, Natural sugar free salt free Peanut Butter, and a home made mix of Chocolate Protein Pudding (see below for recipe)

1 scoop Quest Chocolate Protein Powder

1/4 cup unsweetened chocolate almond milk

Stir until mixed and thick, place in fridge until ready to use!
