Lower Carb Turkey Chili
Just in time for the fall season of stews, soups and food that warm you from the inside out I have come up with a lower carb version of turkey chili.
Paleo and Naturally Gluten Free
Serving size 5-6 portions
Cooking time including prep- 30 mins
Ingredients :
1 lb 93% lean ground turkey meat
1 cup of diced Vidalia or Sweet onion
1 cup of diced bell peppers
1 can (28oz) crushed tomatoes
1/2 cup sliced mushrooms *optional
1 packed of Simply Organic Spicy Chili powder (you can use any brand I’m sure)
- I added 1/4 cup of cilantro
- You can also add jalapeños
Cooking spray or Misto ( http://www.misto.com )
Directions:
In large sauce pan coated with cooking spray combine onions, peppers and mushrooms and sauté until slightly browned
Place to the side , in a separate pan (or the same I washed out this one then reused it due to lack of space) cook ground turkey until brown and fully cooked. Drain out liquid (fat) during cooking.
In a large sauté pan (can be the same pan you cooked the turkey in) add the can of crushed tomatoes, sautéed veggies, cilantro and chili spices. Mix ingredients and continue to cook until fully combined and heated.
Store in tupperware in fridge or portion and store in fridge . Depending on your portion sizes you should get about 5-6 meals from this recipe.
