Avocado Chicken Salad
Have left over chicken breast and don’t know what to do with it? Heres a quick way to jazz it up for some meals on the go!
Yields: 3-4 servings
10-12 oz cooked Chicken Breast (2 medium sized Chicken Breast)
1 whole avocado
1 TBSP Chopped Cilantro
1 cup Sliced Cherry Tomatoes
*** optional Ezekiel Bread or English Muffin
Chop or shred cooked chicken breast
Squeeze lime into a mixing bowl
Mix 1 diced avocado, cilantro, chicken, sliced tomatoes and squeezed lime juice in a bowl.
Add salt & pepper to taste.
Eat alone or over Ezekiel Bread.
