Free Gains Chicken Soup

A twist on the traditional Chicken Noodle Soup, this recipe is low fat and allows you to add your carbohydrate of choice, or go carbless . Paleo & Gluten-Free. Loaded with protein its a great way to get your gains ! 

Prep time: 15mins, Cook time 6 hours slow cooker

Serves : 8 portions

Ingredients:

4 Boneless Skinless Chicken Breast

1TSBP Extra Virgin Olive Oil

32oz of chicken stock ( I used unsalted)

16oz of water

1 soup starter from the vegetable section of your supermarket * if you don’t have that available pick up the following

3 carrots

3 stalks of celery

1 parsnip

1 medium onion

10 sprigs of Dill

10 sprigs of Parsley

Salt & Pepper

** Optional 1 pint of steamed rice or quinoa

 

Directions: 

Chop carrots, celery, onion and parsnip into 1/4″ pieces

Chop parsley & dill

Place all veggies and herbs in slow cooker, put chicken breast on top of veggies

Pour chicken stock, water & olive oil into slow cooker

Season with salt and pepper to taste

Place slow cooker on low heat for 6-7 hours.  About 2 hours in an stir ingredients.

Reheat to serve and add rice or quinoa as needed to fit your macros for each meal .
