Protein Pumpkin “Bread” Pudding
No bread in this delicious protein packed pudding. Just a few ingredients, minimal cooking time and voila you have a delicious healthy dessert or snack! Great for holidays and everyday !

Serves : 7 servings
Prep Time: 5 mins
Cooking time : 15-20mins
Ingredients :
1- 29oz can of pumpkin puree (no added ingredients)
2 scoops of cinnamon or vanilla whey protein powder (I use Dymatize)
2 scoops of collagen powder (I use further food)
1/2 cup egg whites
Cinnamon & Nut Butter for toppings
** you can also add 1/2 cup kodiak cake mix to make it a thicker batter
Directions :
Pre-Heat oven to 350
Mix all ingredients in a bowl
Using a shallow nonstick bake pan place the mixture in the pan evenly
Bake for approximately 12-15min or until throughly cooked in center
Eat while warm or store in fridge, eat cold or reheat for a warm treat
Top with Cinnamon & nut butter of choice then enjoy !
