Guiltless (Boneless) Chicken Wings

Just in time for the Big Game, I have  recreated an old favorite recipe of Boneless Chicken Wings.

Prep Time: 10 mins   Cooking Time : 20 Mins  Servings: 8 (2oz) Chicken Strips or Bites

Ingredients:

1 lb Boneless Chicken Breast
1/2 cup Old Fashioned Oats
1 cup egg whites
2 TBSP Coconut Oil
1/2 cup Sriracha
1/4 cup stevia
Marie’s Yogurt Ranch Dressing

Directions:

  1. Cut chicken breast into 1/4 ” thick slices or you can make them into bites

  2. Make oats into a flour like consistency using a magic bullet, food processor or blender. Then lay 1/4 of the oats on a flat plate

  3. Place egg whites in bowl

  4. Using a large frying pan place 1tbsp of coconut oil over medium heat

  5. Dip chicken into egg whites, then flour until lightly coated, then place in heated pan

  6. Repeat until pan is full, you may have to replace the oat flour at some point with the remainder of mix which you set aside

  7. Turn chicken until fully cooked through

  8. Place cooked chicken on large plate lined with a paper towel to absorb excess oil

  9. Repeat until all chicken strips are cooked

  10. In large bowl pour in Sriracha and mix with stevia until desired level of spiciness (the more stevia you add the less spicy the mixture)

  11. Using 2-3 chicken strips at a time, place in bowl of Sriracha and mix until coated then remove and repeat with remaining chicken strips. ** depending on the amount of chicken you are cooking you may need to repeat this mixture**

  12. Serve with a side of Marie’s Yogurt Ranch Dressing
