Guiltless (Boneless) Chicken Wings
Just in time for the Big Game, I have recreated an old favorite recipe of Boneless Chicken Wings.
Prep Time: 10 mins Cooking Time : 20 Mins Servings: 8 (2oz) Chicken Strips or Bites
Ingredients:
1 lb Boneless Chicken Breast
1/2 cup Old Fashioned Oats
1 cup egg whites
2 TBSP Coconut Oil
1/2 cup Sriracha
1/4 cup stevia
Marie’s Yogurt Ranch Dressing
Directions:
-
Cut chicken breast into 1/4 ” thick slices or you can make them into bites
-
Make oats into a flour like consistency using a magic bullet, food processor or blender. Then lay 1/4 of the oats on a flat plate
-
Place egg whites in bowl
-
Using a large frying pan place 1tbsp of coconut oil over medium heat
-
Dip chicken into egg whites, then flour until lightly coated, then place in heated pan
-
Repeat until pan is full, you may have to replace the oat flour at some point with the remainder of mix which you set aside
-
Turn chicken until fully cooked through
-
Place cooked chicken on large plate lined with a paper towel to absorb excess oil
-
Repeat until all chicken strips are cooked
-
In large bowl pour in Sriracha and mix with stevia until desired level of spiciness (the more stevia you add the less spicy the mixture)
-
Using 2-3 chicken strips at a time, place in bowl of Sriracha and mix until coated then remove and repeat with remaining chicken strips. ** depending on the amount of chicken you are cooking you may need to repeat this mixture**
-
Serve with a side of Marie’s Yogurt Ranch Dressing
