Spiced up Butternut Squash

Prep time- 10mins

Cook Time- 30mins

Servings: approximately 6-8

Ingredients:

2 whole butternut squash peeled and cubed (about 5 cups raw)

cinnamon

mild curry powder

1tbsp Coconut Oil

Himalayan Sea salt

*option to add sliced Vidalia onion

Directions:

Peel and cube butternut squash into 1/4″ pieces. Lay flat on baking pan (spray pan or use foil to prevent sticking)

sprinkle cinnamon and mild curry to liking

Top with salt grinder

pour coconut oil on top

Bake at 350 degrees for 15 mins remove pan from oven turn the squash by mixing it up with a spoon place back in oven for another 15mins or until soft.

Serve & store for later!
