Healthy Spring Roll Stir Fry
This classic dish takes the fried roll out of the equation leaving you with just the protein, fiber, minerals and vitamins needed for a healthy tasty dish !!
**This can be made vegan or vegetarian . It is naturally gluten free when made with gluten free soy sauce

8oz chicken breast (cubed) (can sub tofu or shrimp)
6oz Egg whites
3oz Shredded Carrots
1/3 cup chopped fresh ginger
1/2 TSBP Chopped Ginger
1 TBSP Olive or Sesame oil
1/3 cup low sodium gluten free soy sauce (I used SAN-J)
optional – salt , pepper, thai chili peppers.
Combine Olive oil, ginger, garlic and chicken in wok or pan over medium-high heat to cook chicken, add in 1/8th cup of soy sauce and continue to cook chicken until thoroughly cooked.
In a separate pan cook egg whites
Add in cabbage, carrots to chicken and add remainder of soy sauce. Stir for a few mins then add egg whites.
Once ingredient are all cooked you can add some salt, pepper or Thai Chili peppers to taste.
