Vanilla Maple Coconut Strips!

After spending way too much money on these at Whole Foods I decided to make my own version of this healthy snack which is a perfect addition to a homemade trail mix! I like to add sprouted walnuts &  Lily’s Chocolate Chips . The combination of Omega 3’s, magnesium, flavonoids and MCT make this a perfect mid day brain boost (keto friendly) or anytime snack. Add in some dried berries for antioxidants and carbs and you will be on your way!

Servings 12 (45g each serving)

Prep time under 5 mins

Cook time : 20 mins baking with a half way stirring  of the coconut

Ingredients:

200g unsweetened flake coconut

1 tbsp organic pure vanilla extract

1 tbsp pure maple syrup

Baking pan & tin foil

Instructions:

Pre-heat oven to 375 degrees

Line baking pan with tin foil

Spray foil with non stick cooking spray

Mix all ingredients in a bowl until coconut flakes are fully saturated in vanilla

Lay out flakes on baking pan making a thin layer

Bake for 20mins or until brown (flip flakes about half way through)
